SOUFFLÉ COINTREAU

Cointreau-flavoured soufflé

Serves 2

Preparation and cooking time: 35min

4 tbsp granulated sugar, plus extra for sprinkling

3 egg yolks

4 tbsp Cointreau

30g (1oz) butter, melted

4 egg whites

icing sugar, to serve

1 Preheat the oven to 200°C (400°F).

2 Whisk together 2 tbsp of the sugar and the egg yolks in a bowl, then add the Cointreau and whisk together. Set aside.

3 Melt the butter and, using a pastry brush, grease the insides of two large ramekin dishes.

4 Dust the ramekins with a further sprinkling of sugar, so it sticks to the butter.
